Vineyards:
The Barsotti Vineyard ranks among California's most acclaimed high-altitude sites, set within the El Dorado AVA in the rugged Sierra Foothills. Just outside Placerville, the vineyard climbs to elevations of 2,700–2,800 feet, where decomposed granite and quartz-laced soils drain sharply and stress the vines just enough to concentrate flavor. The result is a mountain-grown terroir entirely distinct from the valley-floor viticulture that defines so much of California wine country.
Winemaking:
This 100% sparkling picpoul was picked at 19 brix and fermented on the skins for 7 days, then pressed into neutral oak barrels and aged for 4 months. The wine was re-fermented in bottle and aged an additional 18 months on the lees before disgorging by hand.
Tasting Notes:
On the palate, the site's character shows through notes of Golden Delicious apple, ginger, apricot, honeycomb, and sage, a mix of orchard fruit, warm spice, and Mediterranean herbal lift that reflects the elevation and mineral-driven soils.
Why we like it:
When direct-pressed, picpoul showcases the variety's bright lemony acidity and oyster-shell flavors. When fermented on the skins, an entirely different savory style emerges. It's a refreshing, savory experience. It pairs perfectly with roast chicken, herbs and root vegetables or roasted halibut with ginger citrus glaze.
