"Big Night" Vol. II Sparkling Red

VINEYARDS:

Escolle Vineyard (Santa Lucia Highlands), Fox Creek Vineyard (Carmel Valley), Witters Vineyard (El Dorado), Camino Alto (El Dorado)

WINEMAKING:

The grapes were harvested between 18 and 20 brix, settled overnight and fermented in a combination of stainless steel and neutral oak barrels. The wines were aged separately for 6 months in barrel before blending. The wine was then aged in bottle for an additional 12 months before disgorging by hand. 12.5% Alc./Vol. 2 g/l residual sugar.
