Escolle Vineyard, 58% Pinot Noir / 42% Chardonnay (25% : 2020 / 75% : 2021)
Winemaking
The grapes were harvested at 18.5 brix, fermented in stainless steel, and blended with 25% reserve Pinot Noir from Escolle. The wine was aged in barrel for 6 months before bottling for secondary fermentation. It was aged 34 months in bottle before being disgorged by hand.

Why we like it
The power and depth you get from Pinot Noir and Chardonnay for sparklers has always been exciting to us. But you need the right site to make a sparkler that's truly stunning. This wine has surprising flavor development at low sugar levels. When you add a little bit of reserve wine and a longer tirage time, you get even more texture. It's our first single vineyard, multi-vintage release from the Escolle Vineyard. It will age beautifully, so it's worth squirreling one away for a special occasion.
