Winemaking
The grapes were harvested at 19.5 brix, settled overnight and fermented in a combination of stainless steel and neutral oak barrels. The wine was aged for 6 months in neutral oak barrels before blending. The wine was then aged in bottle for an additional 22 months before disgorging by hand. 12.5% Alc./Vol. 4 g/l dosage
