2021 "Soft Architecture" Blanc de Noirs
Vineyards:
The Alder Springs Vineyard is located in northern Mendocino County, just 12 miles from the Pacific Ocean. The landscape climbs to 4,000 feet and offers nearly perfect growing conditions: bright sun, cool nights, phenomenal low-vigor soils. Since 1993 we've planted about 140 acres of grapes at elevations ranging from 1,700 to 2,700 feet.
Winemaking:
The wine was direct-pressed before fermenting and aging in neutral oak for 6 months. It was aged an additional 28 months in bottle before being disgorged by hand. 4 g/l residual sugar (Extra Brut). We produced 80 cases.
Tasting Notes:
The wine has a round, glowing texture and tastes like zesty lemons and red apple peel.
