2022 “Tamer and Hawk” Viognier
Vineyards
The Rodnick vineyard is planted on the western slopes of the Gabilan Mountain Range in the Chalone AVA. It’s a wild and beautiful site that’s practically in Pinnacles National Park. The cool high desert conditions combined with the site’s decomposed granite and limestone soil provide perfect conditions for slow, even maturation of grapes grown there.
Winemaking
The wine was picked at 20 brix to preserve the Viognier’s acidity and freshness. It was then fermented in second-fill Damy French Oak and aged in neutral oak barrel for 7 months. We produced 25 cases.
Tasting Notes
Peaches and cream. Recommended pairing: poached salmon, grilled stone fruit, or Singapore-style noodles.
Why We Like It
We love building texture around a focused core of acidity in our wines. One of the easiest ways of doing that is through juducious use of oak. It's a little hedonistic and completely delicious.
