2021 "Late Air" Gamay

Vineyards

The Escolle Vineyard is planted on Chualar Sandy Loam with large deposits of decomposed granite. Perfect conditions for growing world class Gamay.

Winemaking

The wine was harvested at 23 brix and fermented with 30% whole clusters. The wine was pumped over twice a day, pressed to neutral oak barrels, and aged for 8 months before bottling. We produced 120 cases.

Tasting Notes

Wild raspberry, rose, plum, sage. Recommended pairings: trout tacos, herby chicken, roasted vegetables.
