2021 Sparkling Pinot Gris, Inherent Vice
Vineyards
100% Pinot Gris from Eden Rift (Organic). Located 20 miles from the Monterey Bay, Eden Rift was originally planted in 1849. The 120-acre estate rests on the San Andreas Fault line and is part of the Cienega Valley AVA.
Winemaking
The organically farmed grapes were harvested at 19 brix and fermented in stainless steel. The wine was aged in barrel for 2 months in barrel and six months in bottle before disgorging by hand. No part of our process is outsourced or automated. Residual sugar: 4 grams per liter

Why We Like It
The pinot gris from this vineyard is located on a horseshoe-shaped terrace. The site provides an amazing balance between riper melon flavors and focused, floral citrus.
