VINEYARDS: Zabala (Arroyo Seco). This block of Riesling was planted in the 1970s and is farmed organically. As the name suggests, the vines are planted in the rocky soil of a dried up river bed. We decided to make this wine for the simple reason that we wish there were more good sparkling Riesling out there, and the Zabala site is perfectly situated to provide the raw materials.
 
WINEMAKING: The grapes were harvested at 18 brix. Fermented in neutral oak. This is our second release of this wine as a solera method sparkler. Each year we blend our solera into the new vintage and set aside one barrel of the new blend to use for the following harvest. The Solera V2 includes the 2018, 2019, and 2020 vintages. Tirage: 12 months. Dosage: 2 g/l. Disgorged by hand. We produced 4 barrels.

WHY WE LIKE IT: Down By Law is the name of Jim Jarmusch’s beautiful film from 1986. It follows three loners who break out of a Louisiana prison. It seemed like a fitting metaphor for our attempt to free Riesling from decades of misunderstanding. The phrase “Down by Law” refers to someone who has paid their dues and earned their seat at the table. Riesling has earned its place. For this release we have elements of a lovely, laser focused Riesling combined with the honeyed, textured secondary flavors you get from a multi-vintage blend.
