Our Riesling comes from the Zabala family, a multi-generational grape-growing family with roots in California that date back to the 18th century. This block of Riesling was planted in the 1970s. We decided to make this wine for the simple reason that we wish there were more good sparkling Riesling out there, and the Zabala site is perfectly situated to provide the raw materials.

 

Winemaking


The grapes were harvested at 18 brix, settled overnight, fermented in stainless steel. The wine was blended with 25% Riesling from 2018 and aged in barrel for 6 months. It was then tirage-bottled and aged an additional 15 months in bottle before being riddled and disgorged by hand. Brut: 10 g/l residual sugar.

What’s in a Name?


Jim Jarmusch’s 1986 film, Down By Law, follows three loners played by Roberto Begnini, Jon Lurie and Tom Waits, who break out of a Louisiana prison and go on the lam. It seemed like a fitting name for our attempt to bust Riesling free from decades of misunderstanding. The phrase “Down by Law” refers to someone who has paid their dues and earned their seat at the table. We think this Solera Method sparkling Riesling has done just that.
